Gem Jam Sugar. Not sugar for your pyjamas, but sugar for make perfect jams, conserves, marmalades, preserves and jellies. The added pectin ensures your jams set quickly and effectively, whilst keeping the colour of the fruit. Works particularly well with fruits which are naturally low in pectin. Known as "gelling sugar" in the US of A.
Preparation and Usage
Best used with fruits low in pectins like strawberries, raspberries, blackberries, blueberries, loganberries, pears, rhubarb, apricots, and peaches.
